A MINESTRONE SOUP WITH A TWIST

Soups are my jam! I LOVE Soups. They are really easy to cook, they are packed with nutritious ingredients, and they usually make a lot so that you can keep sippin on them all week. It makes planning for your week meals quick and easy. I will generally have one soup planned and ready to cook each week so that way Dinner’s and Lunches come in handy; because I am able to add extra veggies on the side or a salad or some good protein and there you have it, a delicious and nutritious meal. In my opinion this way you aren’t always tired of eating just the same leftovers for the week and you stay encouraged to eat healthy by getting creative in your kitchen!

This Veggie Minestrone Soup lasted us a good 4-5 days and It is SO simple that you will be surprised with how delicious it is because of how easy and quick it is to cook up!

I actually call this recipe my “Weekly Dose of FARM-acy” because it has everything you need in it to keep your immune system up and running.

In this Soup you’ve got:

*SWISS RED CHARD: Swiss chard is a low-calorie vegetable that is high in magnesium, iron, potassium and vitamins A, C and K. The Stalks are SO yummy and add a sweet yet slightly bitter taste to this soup! I used the Stalks in place of Celery in this recipe.

*WHITE SWEET POTATO:  Contains vitamin C and potassium, and have a moderately low glycemic index which along with magnesium and essential fibers helps to make this vegetable a good aid in the regulation of blood glucose levels and helps to manage diabetes.

*ZUCCHINI: Has High levels of Vitamin A along with Antioxidants which adds beneficial support to your body for improved digestion and is an important vegetable to add into your diet to help lower risk of heart disease.

*CARROTS: Are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. They have been linked to lower cholesterol levels and help to improve eye health.

*TOMATOES:  are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K

*CILANTRO: Is SO important in my book as it’s rich in phytonutrients, flavonoids, and phenolic compounds, a good source of dietary fiber, vitamins A, C, E, K, calcium, iron, potassium, and magnesium. The vitamin K and calcium content of cilantro help to build strong bones, teeth, and hair. Cilantro is considered the “anti-diabetic” plant in some parts of Europe, and research shows that it helps to lower cholesterol, lower blood pressure, supports healthy cardiovascular function, and much more like even ridding the body of heavy metals and toxins.

Side Note: Be sure to give your little Fur Sous-Chefs some scraps of Zucchini while your’e at it because those nutrition benefits are great Antioxidants for your dogs and animal babies as well!

What makes this soup EVEN better? Cornbread! GLUTEN-FREE Cornbread to be exact. It won my Husband over and it’s a win!

:GLUTEN-FREE CORNBREAD MUFFINS RECIPE:

INGREDIENTS

  • 1 1/2 Cup Gluten Free Baking Flour. ( I used Bob’s Red Mill Paleo Baking Flour but any Gluten Free Flour will work here)
  • 1 tsp baking powder (Aluminum Free)
  • 1/4 tsp Himalayan Salt
  • 1/2 cup coconut oil or dairy free butter
  • 3 eggs
  • OPTIONAL: 1/4 Cup Honey if you would like it sweet
  • OPTIONAL: 1 cup yellow corn kernels or 1/2 to 1 Cup of Seeded and Diced Jalapeño peppers

INSTRUCTIONS 

  • Preheat oven to 375° Fahrenheit, and line a muffin pan with paper liners
  • Place all of the ingredients, except for the corn or jalapeños (if using) in a large mixing and mix with a fork.
  • Fold in corn and/or jalapeños (if using), and spoon the spoon the batter evenly into the prepared muffin pan, filling each cup about 3/4 full.
  • Bake for 17-20 minutes or until the top turns golden brown, and a knife or toothpick comes out clean. 
  • Remove from oven and cool. Serve Up with a bowl of your Minestrone Soup and feel the your immune system powering up and ready to support you!!!
